Just One Pot

Steak & Kidney is an old favourite of mine. It is really easy to throw together and you only have to dirty one pot.

If you make double the quantity you can freeze half for future meals. As a variation you can always use the leftovers in some pastry to bake some delicious pies. Frozen pastry is available from any supermarket and is economical as well.

Mashed potato is guaranteed to make a great side dish. To balance the meal you can always add some colourful vegetables such as carrots, beans, corn etc.

Because I have added a variety of vegetables to my stew, I mostly serve it with rice or pasta and/ or toast.

This is a meal that you can be remembered for. My boys still ask for it when they visit.

Ingredients

1kg diced steak and kidney

3 med potatoes (peeled & diced)

1 onion

1 cup celery (diced)

1 cup frozen vegetables  (mixed)

4 cups beef stock

1 tablespoon margerine ( for frying)

Salt & Pepper (to taste)

Heavy dash of Worceshire Sauce

Pinch of cayenne pepper.

2-3 tablespoons corn flour for thickening.

Method

Melt margerine in one large pot.

Add steak & kidney and onion.

Fry until brown.

Add potato, celery, salt & pepper, cayenne pepper and worcestshire sauce.

Stir.

Add beef stock & frozen veges & bring to the boil.

Let simmer for about 45 minutes.

Thicken with a paste of cornflour and water.

Stir.

Check the liquid levels while the stew is simmering. Add more if needed.

Comfort Factor

As mentioned before this meal can be served in a variety of ways. I always love it with veges and mashed potato. If time is a factor, it can always be served as is, because the vegetables are already in the pot. I quite often serve it with rice or pasta, just for it's ease factor.

The juices are wonderful to sop up with fresh bread and are full of vitamins.

Every time that I eat this meal I am reminded of my grandmother who always served hearty, healthy, economical stews. I have very fond memories associated with this style of food.

Whenever she was inundated with extra visitors, it was no problem for her to just add some extra potatoes and flavourings to the pot to stretch the meal a little bit further.
